“We have customers come in from one end of the Valley to the other, so being in Mercedes, in the middle (of RGV), has worked out for us,” Dominguez notes. The story of Smokin Oak is one of passion and perseverance. Mario B. Dominguez, the father of Mario Jr. and Santana, built a successful insurance business in Mercedes. The younger Mario initially followed a similar path after college, joining the family insurance business. However, frequent trips through Central Texas sparked a new ambition. Inspired by the BBQ joints he discovered along Interstate 35, Mario Jr. dreamt of bringing that authentic Texas flavor back home to Mercedes.

He started small in 2015, launching the first iteration of Smokin Oak at his grandmother’s property. Balancing limited hours with his insurance commitments, the initial success quickly convinced him to pursue his BBQ dream full-time. In 2017, he and Santana expanded Smokin Oak, extending their hours to midday, Wednesday through Sunday.
